This limited annual release is the result of a unique partnership with Catskill Mountain Sugarhouse. The process begins with freshly dumped bourbon barrels traveling to the sugarhouse, where they are filled with New York Grade A Organic Maple Syrup. Once the syrup has aged and absorbed the wood’s character, the barrels return to the distillery to be refilled with bourbon.For months, the spirit rests in these seasoning-rich casks, soaking up the residual sugars left deep in the wood staves.
