Ettore Zucca created this Rabarbaro(rhubarb root) Liqueur in 1845. Zucca was a favorite in the Royal House of Savoy and across Milan for its deep, rich, and smoky flavors. As its house bitter, the Caffe Zucca in Galleria serves Zucca with soda or tonic on crushed ice, for a light, low alcohol aperitif. Zucca is also delicious with grapefruit soda, espresso or as a source of smoky depth in rum, tequila,and whiskey cocktails. With tonic, lime and ice (and perhaps a spot of rum), it makes for a refreshing and complex variation from the classic rum and cola.Made from an infusion ofRhubarb Rootstocksand a secret selection of rare herbs, Rabarbaro captures an appealingly delicate flavor.
